Sarah Leverton's Spicy Turkey

Serves 4. Freezes well.

  • 2 oz. Butter/margarine/oil
  • 1 onion - diced
  • 1 clove garlic - crushed
  • 2 leeks - sliced
  • 4 rashers bacon or diced ham
  • 3oz. Mushrooms
  • 2 teaspoons curry powder
  • 4 tablespoons plain flour (or substitute wheat free plain flour)
  • ¾ pint chicken stock
  • ¼ pint milk
  • 2 tablespoons raisins
  • 1¼ lb. Chopped cooked turkey
  • Seasoning to taste

Method

  1. Fry onion, garlic, leeks & bacon until soft.
  2. Add mushrooms; cook.
  3. Stir in curry powder & flour off the heat, then cook for 2 minutes.
  4. Gradually stir in the stock & milk. Bring to the boil & simmer for 1 minute.
  5. Add raisins & chicken.
  6. Taste; season as necessary. Add a drop of boiling water if too thick.
  7. Simmer for approx. 15 minutes until heated through.
  8. Serve with rice.
