Serves 4. Freezes well.
- 2 oz. Butter/margarine/oil
- 1 onion - diced
- 1 clove garlic - crushed
- 2 leeks - sliced
- 4 rashers bacon or diced ham
- 3oz. Mushrooms
- 2 teaspoons curry powder
- 4 tablespoons plain flour (or substitute wheat free plain flour)
- ¾ pint chicken stock
- ¼ pint milk
- 2 tablespoons raisins
- 1¼ lb. Chopped cooked turkey
- Seasoning to taste
Method
- Fry onion, garlic, leeks & bacon until soft.
- Add mushrooms; cook.
- Stir in curry powder & flour off the heat, then cook for 2 minutes.
- Gradually stir in the stock & milk. Bring to the boil & simmer for 1 minute.
- Add raisins & chicken.
- Taste; season as necessary. Add a drop of boiling water if too thick.
- Simmer for approx. 15 minutes until heated through.
- Serve with rice.
