In the Copas Family this recipe is called “Turkey Gu” and is the favourite choice of the whole family on Boxing Day. Based on Brenda’s classic, a similar recipe can also be quickly be made with a jar of our Coronation Sauce, the same amount of mayonnaise, salt, pepper and chilli flakes as desired. Tom jnr has perfected the technique and insists that marinating overnight in the fridge is vital.
2 tsp honey
4 tbsp mixed chutneys e.g. mango & tomato
2 tsp curry powder or paste
Small glass of white wine
300ml double cream (or half crème fraiche & half double cream)
300ml good quality mayonnaise
1kg cold cooked turkey cut into bite sized pieces
fresh parsley or paprika
1.Mix all the sauce ingredients together. Add the diced turkey to the sauce, mixing all thoroughly together. It is best stored in fridge overnight be-fore serving so all flavours will marinate together.
2.Turn into serving dish and garnish with parsley or paprika just before serving.
